______________________Stir-Fried Vegetables
Ingredents:
22 Tbsps. Oil
4 to 5 cloves garlic
2 pounds vegetables (asparagus,broccoli, green beans, etc.) cut into ½ inch diagonal slices
1 can (8 ounces) water chestnuts,drained and sliced
2 Tbsps. Soy sauce
salt and pepper to taste
½ cup toasted nuts (cashew,almonds, peanuts, etc.), optional

Preparation:
Heat oil in a large skillet or wok.  Smash garlic by whacking cloves.  Remove peel. Add garlic to oil.  When the garlic begins to give off aroma, remove and discard crushed cloves.  Add vegetables and stir-fry over high heat until crisp-tender.  Add water chestnuts and seasonings. Stir-fry another minute to heat through.  Sprinkle with nuts and serve at once.  Serves 4 to 6.
